Watermelon Salad with Feta, Cucumber and Mint

A light and refreshing salad that bursts with sweet and salty flavour, offering more colours than a Bondi sunset. This watermelon salad comes together quickly and only requires a handful of ingredients. Can be served alone but it is exceptional when paired with grilled fish.

Ingredients

Salad

  • 8 cups of watermelon - 1 medium sized watermelon
  • 1 large sized lebanese cucumber
  • 2 tbps red onion (optional)
  • 1/3 cup mint leaves

Dressing

  • 1 lime juiced, approx. 4 tbsp
  • 4 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

1) Cut watermelon into bite sized cubes

2) Cut the cucumber lengthway creating half moon shapes

3) Chop mint leaves finely

4) Cut red onion into very thin slices creating half moon shapes

5) Create dressing my mixing freshly squeezed lime juice, olive oil and salt to taste

6) Combine all ingredients together in a bowl

7) Pour dressing and mix well, be careful to not squash the watermelon so they can retain their shape
