Watermelon salad is one of my go-to salads during summer as it is light, refreshing and full of flavour. It comes together with a few easy steps with minimal clean up. The refreshing combination of chilled watermelon, cooling cucumbers and salty feta creates a beautiful dish that is on another level of deliciousness. A great plate to take to your next get together, picnic or BBQ.
I typically enjoy this salad alone or with grilled white fish during summer. This salad has a fantastic foundation so mixing it up with other ingredients is absolutely possible. Feel free to experiment with basil, shallots, avocados and hot peppers.

A light and refreshing salad that bursts with sweet and salty flavour, offering more colours than a Bondi sunset. This watermelon salad comes together quickly and only requires a handful of ingredients. Can be served alone but it is exceptional when paired with grilled fish.

Dressing
1) Cut watermelon into bite sized cubes
2) Cut the cucumber lengthway creating half moon shapes
3) Chop mint leaves finely
4) Cut red onion into very thin slices creating half moon shapes
5) Create dressing my mixing freshly squeezed lime juice, olive oil and salt to taste
6) Combine all ingredients together in a bowl
7) Pour dressing and mix well, be careful to not squash the watermelon so they can retain their shape
